So what’s the big deal about it?  Here’s a link for the technical stuff, but I”ll just give you the high points and important info you need.

The big deal is that to make true Champagne, which only comes from the Champagne region of France, it takes time.  It takes time, effort, and love.

At Champagne’s heart it is just bubbly white wine, but to get the delicate bubbles you have to ferment it in the bottles themselves not in large batches.  When you experience a good Champagne,  you are experiencing time in a bottle.  Every bubble is a moment in time that was trapped creating the vintage.

Larger production sparkling wines are made much like a carbonated beverage.  Injecting CO2 into white wine is just not as romantic as the real thing.

Sharing a glass of champagne with a partner should never be taken for granted.  Two glasses and strawberries, together with a bottle of Dom Perignon, can set the tone for a relationship (Just try and hold up your end of the deal!)
